The next in the series of biscuits within cakes, I give you iced gem cakes!!
They are quite a light biscuit so they rose to the top of the cake. Which actually makes them visually quite nice!
And they are delicious! Probably because the biscuits were at the top, they didn’t go soggy which meant there was a nice crunch. Yummy!
